Every dish feels thoughtfully curated, from seasonal cheeses and cured meats to beautifully presented entrées and desserts. For starters, I recommend the mango-lime ceviche with delicate white fish, cucumber, avocado and red onion, or the Buffalo Chicken Empanadas with cilantro ranch drizzle. The “Three Sisters and a Fish” stars Chilean sea bass with roasted corn and black bean relish, squash blossom sauce and blistered tomatoes; this flavorful dish simply melts in your mouth. The San Juan Chicken takes comfort food to a new level with roasted corn, herbed ricotta, green beans and mashed potatoes in a lemon cream beurre blanc sauce. Another savory option is the pistachio-crusted lamb rack served with purple cauliflower, roasted carrots and beluga lentils. Craft cocktails are equally impressive, from the Prickly Pear Negroni with pear and orange blossom gin to the Citrus Coast featuring Aperol, Sauvignon Blanc, pamplemousse and lemon. The La Frambuesa blends Golden Eagle vodka with lime, raspberry and lavender flavors. Other beverage options include Spanish wines and a wide selection of draft beers. Desserts vary by season and include favorites such as apple cinnamon churros, vegan chocolate cake and seasonal gelatos and sorbets.

Chef Marc received his training in the culinary arts at Le Cordon Bleu in Paris, then spent 18 years as Executive Chef on world-class cruise ships such as Crystal Cruise Lines, Oceana, and Seaborne. “What drew me to Tannins,” Chef Marc shares, “was the exceptional menu. I’ve traveled all over Europe and I’ve seen the best of Italian cuisine, and in my opinion, Tannins is the top Mediterranean restaurant in all of Orange County.”

In his new role at Tannins, Chef Marc has elevated the menu with handcrafted appetizers, entrées and dessert specials that are updated every two weeks. His creations showcase the freshest possible ingredients, high quality pastas, and tempting flavors based on authentic European dishes.

According to Chef Marc, he typically prepares his specials where most of the dishes separate certain culinary dynamics which help to pair the vast collection of fine red and white wines at Tannins. Just ask your server or the restaurant’s sommelier for a recommendation on the perfect bottle to complement your meal.

When it comes to the main event, be sure to try the traditional Venetian Pancetta Carbonara, made with premium pancetta, linguini, olive oil, parmesan cheese and egg. Another one of Chef Marc’s most popular entrée specials is his Seafood Posillipo, a delicious combination of fresh shrimp, clams, scallops, and salmon sautéed in a red wine marinara broth over linguini. For dessert, don’t miss the crowd-pleasing “Big Apple” — a homemade apple cobbler topped with vanilla bean ice cream. For a weekend, Irvine transforms into a vibrant slice of Greece as St. Paul’s Greek Orthodox Church hosts its 46th annual Irvine Greek Fest from June 26–28. Held on the church campus at 4949 Alton Parkway, the three-day celebration brings the sights, sounds and flavors of Greece to Irvine in a lively, family-friendly setting.

Modeled after a traditional Greek street fair, the festival offers something for all ages. Guests can explore the “Agora” marketplace, browse boutique shops and a bookstore, enjoy carnival rides in the kids’ zone, and experience live Greek music and folk dancing throughout the weekend. It’s an immersive cultural experience that invites visitors to be “Greek for a day.”

Food is at the heart of the celebration, with a menu of authentic, timehonored favorites. From gyros and Greek fries to spanakopita, dolmathes and pastichio, each dish reflects generations of tradition. Guests can also enjoy Greek coffee and frappés at the kafenio, along with an assortment of homemade pastries. A festival favorite, loukoumathes—warm Greek doughnuts drizzled with honey and cinnamon—are known to sell out quickly.

Live entertainment includes performances by the Takis Kokotas Band and traditional dance showcases by St. Paul’s Agape and Zoi groups. A Taverna bar will serve Greek beer and wine, with a big-screen TV airing major sporting events throughout the weekend.

Visitors are also invited to tour the church, home to more than 20,000 square feet of intricate mosaic artwork created by Italian artisans. Inspired by ancient Christian traditions, the space offers a unique opportunity to learn more about Orthodox Christianity and its rich history.

Gary “GW” Wright founded Killer Dana in 1991, naming the shop after the legendary local surf break. The notorious “Killer Dana” wave once posed a formidable challenge for surfers, breaking dangerously close to the rocks lining the Dana Point cliffs and shoreline. The break was largely destroyed following construction of the harbor and break wall in 1966.
