Foundations Cognitive Schools
FOR STUDENTS WITH LEARNING DIFFICULTIES

Foundations Cognitive Schools

The Foundations program methodology is to move past the traditional concept of simply managing the symptoms of learning disabilities and, instead, address the root cause of these challenges. Based on the concept of neuroplasticity (the brain’s ability to change, heal, and grow in response to targeted training), each day, students perform cognitive exercises that have been scientifically proven to strengthen weak cognitive capabilities. In other words, the goal of Foundations is to transform the brain, establishing capabilities that did not exist and, thus, begin to instill a newfound confidence and a love of learning. By strengthening cognitive capacities, students are able to work through tasks which were once incredibly challenging for them. In addition to its scientific approach to cognitive improvement, Foundations includes state-certified reading and mathematics programs. When combined with the cognitive exercises, these programs have helped many of its students achieve dramatic improvement in reading, writing, and math.

INDIVIDUALIZED PROGRAM THAT PROVIDES INCLUSION IN SCHOOL ACTIVITIES
For the 2020-2021 school year, Foundations will have one multi-grade elementary class, one junior high class, and one high school class. Each classroom will have a student-teacher ratio of 4:1. Each student is assessed and works at a pace and level that is appropriate for his or her particular needs. In order to ensure that students are connected socially to others in their peer group, Foundations is located on the campus of a large private school, which allows students to attend recess, lunch, and enrichment/elective classes (P.E., art, music, etc.) with mainstream students in their grade. They also have the opportunity to play on sports teams and to participate in extra-curricular school activities offered at its partner school, such as choir, dance, cheer, clubs, etc. The high school students are offered the option to pursue a high school diploma, or to participate in a Certificate of Completion program.

PARTNER SCHOOL
Foundations is located on the San Juan Capistrano campus of the prestigious Fairmont Schools. The beautiful campus, spanning 66,000 square feet, includes two educational wings full of classroom space, playgrounds, gymnasium, music room, science labs, and more.

Our Savior's Lutheran School

Conveniently located on the South end of San Clemente, Our Savior’s Lutheran School (OSLS) is a developmental, play-based, Reggio-inspired, Christian Preschool and Infant Center (soon to open). Our Savior’s is a close-knit family that understands and values exceptional education, equipping children to be positive members of their community.

OSLS is committed to excellence through a creative and energizing curriculum, with a strong social, emotional, and Christ-centered foundation. Curriculum is modeled around Howard Gardner’s Theory of Multiple Intelligences. Its highly qualified and inspirational staff provide a quality educational experience. All OSLS families receive constant communication regarding their child’s growth, supported by assessments and progress reports along with parent-teacher conferences. This partnership facilitates an extension of the child’s day into the home and bridges the learning opportunities both at school and beyond.

Our Savior’s Lutheran School provides a unique opportunity for children to be engaged in a develop-mentally appropriate environment with a child-centered approach. The preschool team designs their curriculum and lesson plans starting with the California Preschool Learning Foundations, customizing instruction based on the child’s individualized goals and needs. These developmentally appropriate practices and classroom experiences intentionally foster exposure to the world around the child and capture the many moments of curiosity. Through-out the day, OSLS teachers guide student learning individually and in groups to explain, educate, and empower the children, encouraging them to ask questions and explore their learning environment. They understand that every child develops at their own pace while being committed to continuous growth and excellence in all levels of early childhood education. With a long-term education in mind, OSLS’s most important goal is to foster and encourage a love of learning.

Capistrano Unified School District (CUSD)

Capistrano Unified
School District (CUSD)
AN UNWAVERING COMMITMENT TO STUDENT SUCCESS

Capistrano Unified School District (CUSD)

Capistrano Unified School District (CUSD) has spent the last three months building a reopening plan for the fall with the priority of providing an excellent education while ensuring the health and safety of CUSD students and school employees.

On July 17, Governor Newsom announced that all schools within Orange County are required to open the 2020-21 school year using online learning ONLY. Governor Newsom made this a requirement for all counties on the state’s coronavirus monitoring list. CUSD will reopen its classrooms and campuses when the updated guidelines allow for schools to safely do so.

The centerpiece of CUSD’s trustee-approved reopening plan is a robust, consistent, and engaging curriculum that aligns with the District’s core values and can be successfully delivered both in a traditional school setting and online. CUSD’s Board of Trustees approved a comprehensive online curriculum that has been vetted, used consistently with success, and delivers the District’s core values of rigor, engagement, consistency, and flexibility.

K–5 OPTIONS WHEN OC IS REMOVED FROM THE MONITORING LIST:

  • Students can spend 100 percent of their school time engaging in online learning or attending class on campus, or they can split their time between home and school.

SECONDARY OPTIONS — 6–12 WHEN OC IS REMOVED FROM THE MONITORING LIST:

  • Students can choose 100 percent online learning or spend half their time on campus with a flipped classroom format utilizing independent study. CUSD will ensure juniors and seniors continue to have access to the resources they need to increase their options for post-secondary life after high school.

This plan provides an enriched learning curriculum compared to the distance learning initiative that was implemented quickly in response to the pandemic this past spring. CUSD continues its commitment to excellence in curriculum and instruction. The 2020-21 school year will include an integration of mental health, emotional support, and social emotional learning.

CUSD will also continue to foster cultural diversity in partnership with the District’s Cultural Proficiency Task Force, established last fall, and with our students, families, and staff.

Although CUSD is navigating unprecedented times, it remains committed to academic rigor, consistency, and providing an engaging and flexible online and classroom educational experience for all students, while protecting the safety and security of families and employees.

Billy’s Meat, Seafood & Deli

by Dina Scaglione

Every once in a while, you get a hankering for something different, yet familiar — a craving that only a good deli sandwich will satisfy. The next time your belly nudges, be sure to hit up Billy’s Meat, Seafood & Deli in San Clemente for a delicious, piled-high masterpiece.

Billy’s tagline: “a cut above the rest,” aptly describes its commitment to offering only the finest product selection to its loyal following. Established in 1990, Billy’s is a local fave, long-admired for its reliably authentic deli offerings and full-service butcher shop, purveying high quality meats including black angus steak, fresh seafood and a generous selection of spices, marinades and dry rubs. To complete your meal, check out Billy’s side dishes, such as the classic potato salad and a Mediterranean Greek, loaded with cucumbers, tomatoes, olives, feta cheese and bell peppers.

The sandwich makers at Billy’s are skilled artisans, building handcrafted deli-style sandwiches with generous portions of meat, cheeses and veggies. To say these sandwiches are huge is an understatement. Along with Boar’s Head products, Billy’s also offers an array of its own roasted and smoked roast beef, pulled pork, shredded chicken, and meatballs along with 30+ entrées and side selections that deliver a one-stop shopping experience. With such an endless variety of made-to-order sandwiches, it’s difficult to choose just one.

The popular Turkey Avo is overflowing with roasted turkey, provolone cheese, avocado, lettuce, tomato, pickle, red onion, mayo, yellow mustard, and served on soft squaw bread. The Poor Boy is your classic sub, heaving with ham, mortadella, salami, provolone, mayo, deli mustard, lettuce, tomato, pickle, onion, pepperoncinis and Italian dressing on a French roll. And, yes,  even in beachy South Orange County, you can find a good Ruben — it’s at Billy’s. The Best Ruben Ever features corned beef, Swiss cheese, sauerkraut, 1,000 island dressing, generously layered between two slices of grilled rye. “Now, That’s a Meatball” is your traditional Italian staple, made with hand-made meatballs and served hot with tangy marinara sauce, melted mozzarella cheese and pepperoncinis — on a warm, French roll. Delizioso!

The next time you’re hosting an event, consider Billy’s catering menu which offers a selection of crowd pleasers for any size gathering. Walk in and peruse the vast deli and specialty items or order online. Billy’s is open daily from 9:30 a.m. to 6 p.m. (5 p.m. on Sundays — closed Mondays).

Bueno Bueno Mexican Kitchen

Bueno Bueno Mexican Kitchen

by Dina Scaglione

South Orange County has long been known for its wide variety of south of the border specialty restaurants, from traditional favorites to jazzy fusions. If you’re looking for an authentic Mexican food experience with an intriguing twist, Bueno Bueno may just be the place for you. Ideally situated in the heart of historic downtown, near the train station and the Mission, Bueno Bueno imbues a distinct Spanish charm, espousing the warmth of San Juan Capistrano, bringing a balance of new moments blended with traditional tastes.

It’s not often that you’ll find light, healthy or vegetarian items on a Mexican food menu, but the old world meets new world offerings at Bueno Bueno to deliver plenty of great-tasting and satisfying options. The Capistrano bowl, for example, is loaded with Mexican rice, black beans, iceberg lettuce, sweet corn, queso fresco, roasted pepitas, radishes, pico de gallo, avocado and glazed with a light, zesty cilantro dressing. The delectable Enchiladas de la Casa begin with homemade corn tortillas, rolled with queso fresco and topped with a tangy red sauce, served with beans and rice — with the option to add protein if you desire. The Chile Reyeno, playfully named after Chef Rey Pinedo, features a vibrant green pasillo pepper, slightly spicy and infused with authentic smoky flavors, overstuffed with rice and queso fresco, and topped with grilled shrimp. If tacos are your jam, then try one of the house specialties, teeming with carne asada, beer-battered shrimp or fried calamari. The Tinga de Pollo taco, accompanied with savory chipotle caramelized onions and crunchy cabbage, is definitely not to be missed.

Dine al fresco on the patio or sit safely and socially distanced in the expansive dining area. Adult beverages include beer and wine from Mexico and interesting, hand-crafted cocktails. Bueno Bueno serves tequila, of course — or as they call it — “soup of the day.” The name says it all; Bueno Bueno is doubly good!

Paws Pet Resorts

Paws Pet Resorts

Paws Pet Resorts

An Oasis for Your Pup

Paws Pet Resorts was opened by Chris Pernick in 2005 with a simple idea — create a really fun, safe, and clean environment for dogs. The professional staff has extensive training in dog behavior and is comprised of dog lovers who are committed to treating your dog like a member of the family.

Chris believes that most dogs crave and need socialization with other dogs, so Paws offers play groups for both daycare and boarding guests. For dogs that prefer only human interaction, Paws provides private play activities designed with their needs in mind. All activities can be viewed on “live” doggie cams throughout the facility and in private boarding rooms.

As a family-owned business, Chris reinvests profits back into the company’s facilities, her employees and the community. Chris is a big supporter of several local dog rescue groups. Over the last 15 years, she and Paws have rescued and re-homed over 400 dogs.

During the pandemic, Chris and her two locations have struggled — like so many other small businesses in our community. She’s thankful, however, to have the loyalty and support of her customers during this period of uncertainty. As a gesture of appreciation, Chris received a donation from a longtime customer for a virtual doggie daycare session to reunite her four-legged companion with the Paws staff. “We’ve had customers bring in lunch for the staff throughout the stay-at-home order. I just can’t thank them enough,” shared Chris.

Fortunately, Paws Pet Resorts has been deemed an essential business and is open for boarding, daycare, training and grooming. Paws closely follows the social distancing guidelines outlined by local government officials and health experts, including curbside pick-up and drop-off, so you can stay safe and your dog can have some fun.

For more information or to book a session call, 800.964.7297. For behind-the-scenes sneak peeks of life at Paws, follow them on Facebook and Instagram.

Chris is grateful to all of her loyal customers and looks forward to seeing her four-legged clients again soon. The company slogan says it all; “We hope your best friend will Stay ‘n Play at Paws Pet Resorts.”

Acting Academy for Kids

Acting Academy for Kids

PARENTS & KIDS RAVE THAT AA4K IS THE BEST IN THE OC!

By Victoria Kertz

It all started with Peter Pan — not the animated movie, but a live children’s production that Stephen Zygo auditioned for many years ago. He was cast in the role of Smee, the villainous Captain Hook’s lovable sidekick, which sparked his lifelong dedication to the performing arts.

Zygo, a graduate of SUNY Cortland’s very first musical theatre program, founded and operates the dynamic Acting Academy for Kids (AA4K). As one of Orange County’s most renown children’s after-school theatre and summer camp programs, it offers a variety of performance classes for all ages. Zygo recently opened the company’s flagship location in Mission Viejo, complete with soundproofed lesson rooms, an expansive dance studio and a state-of-the-art theatre showcasing a stunning LED lighting wall and seating for 120 people.

It’s here that kids can really sink their teeth into the arts and get a comprehensive education in an array of performance mediums, something Zygo is passionate about bringing to the community. Kids can focus on the popular disciplines of voice, dance, acting or music, but also have the opportunity to learn the technical side of live theatre. AA4K’s behind-the-scenes education in theater production includes light and sound design and a Junior Directors program, allowing participants to enjoy a truly hands-on experience in what occurs off-stage.

AA4K is also one of the few performing arts centers for kids that offer a TV and Film program and a recording studio. Artistic Director, Monica Cortez, is dedicated to comprehensive youth offerings that meet the interests of children both in front of the camera and in areas that support the creative process. Zygo says that some of the film opportunities at the new Mission Viejo location will even enable kids to receive IMDB credit.

AA4K might be best known, however, for its long-running summer camp program, now entering its 12th season. This year, Zygo and his team are offering camps in several Orange County locations: at the new Mission Viejo theatre, the historic Cabrillo Playhouse in San Clemente and at the Lyceum Village in Irvine — a children’s after-school enrichment campus that has its own theatre.

“Summer camps are a wonderful opportunity to ‘test-drive’ the arts,” Zygo says.

Kids can choose from four classes: music, acting, dance or fusion, which is a combination of all three. Students will work together to produce a full-scale mini-musical, all in one week. This year, Aladdin, Frozen-Solid 2, The Greatest Showman and others are available for kids ages 4 to 14. Each show rotates between AA4K’s three summer camp locations.

“We really try to make sure the kids get as much stage time as possible,” shares Zygo. “Casts are kept small so that we keep kids engaged,” he adds. With intimate cast sizes, children have the chance to play two to four roles in each production.

Camp instruction is provided by a staff of experienced, returning teachers — veterans of Zygo’s academy and performing artists program themselves. “Our staff is really amazing, especially our teachers, since they are dual-focused. Many of them are teaching artists who still perform. They typically also have degrees in the arts,” he says. A passionate group of high school and college students add another layer of assistance. Most of them are former students of Zygo’s as well.

Acting Academy for Kids

“A lot of the kids that were former AA4K students are now applying for positions with me,” Zygo says with a smile. The entire staff, whether permanent or for summer only, are Livescanned and CPR certified to ensure the safety of everyone involved, he says. “All three venues are kid-safe and family-safe,” Zygo adds. The buildings are also made to be inclusive and safe so that parents have peace of mind.

Whether your child is showing a new interest in the performing arts or is honing their musical skills, Acting Academy for Kids is a welcoming place to learn, improve and create memories that will last a lifetime. Summer camp registration is now open for 2020. Please visit ActingAcademyForKids.com/summer-camp for more information and registration.

“We want kids to have a great summer with us,” Zygo says. “Whether it’s one week or more!”
