A highly anticipated, fun-filled weekend is right around the corner! The San Juan Capistrano Greek Festival, sponsored by Saint Basil Greek Orthodox Church, returns to San Juan Capistrano for its 8th annual celebration of Greek culture on Saturday and Sunday, September 25th and 26th. The event is chock-full of authentic Greek food and drink, live music, traditional Greek dancing, souvenir shopping at the Greek Bazaar, and a fully-loaded Kids Zone. There will be a raffle drawing for a grand prize vacation for two to Mexico!

Authentic and delicious Greek fare, including favorites such as Gyros, Mediterranean-seasoned Lamb Chops, Souvlaki (kebabs), Spanakopita (savory spinach pastry), Tiropita (layered cheese pastry), Pastitsio (Greek lasagna) and Greek Salads will tempt and tantalize festival attendees. You’ll enjoy handmade Greek delicacies from traditional family recipes, including mouth-watering Baklava, powdered sugar Kourambiethes and honey-dipped Loukoumades (Greek donut holes) along with traditional Greek coffee and refreshing iced coffee Frappés.

Don’t miss the popular “Taverna” with a sports bar twist – equipped with bigscreen satellite TVs where guests can enjoy domestic favorites, as well as Greek beer, wine and Ouzo. Stroll through the Festival’s Greek Vendor Marketplace where you’ll find an assortment of unique ingredients (including Greek olive oil, honey, teas, and spices) along with an array of themed souvenirs, gifts, jewelry and books to tempt shoppers of all ages.

The Greek word “Kefi” means the spirit of joy, fun and a passion for life. You’re sure to feel Kefi as you’re transported to the enchanting country of Greece by the sights, sounds and culinary delights of this fun-packed Festival weekend. Within seconds, the live music and Greek dancing will have you on your feet, expressing your inner-Kefi with shouts of “Opa!” and an unusual desire to break plates (don’t worry… easy-to-follow lessons are provided). The Saint Basil awardwinning dance troupes will also perform traditional dances in authentic costumes representing different regions of Greece.

Hours for the festival are 11 a.m. to 10 p.m. on Saturday, and 12 p.m. to 9 p.m. on Sunday. Parking is free all weekend long.

A new eatery has emerged in Mercado Village near downtown San Juan Capistrano, showcasing savory Mediterranean fare, served up in a quaint and inviting atmosphere. Family-owned and operated, Parmiss Mediterranean Restaurant brings a delightful new energy along with an abundance of delicious and unique Persian flavors. Opening its doors on April 13, the local community has embraced Parmiss like a long-lost friend — lured by its warm, generous hospitality and delectable cuisine.

When you visit Parmiss, prepare to experience an array of sumptuous dishes, such as appetizers like Panir-o Sabzi, comprised of cheese and fresh mint, Persian style marinated olives, calamari and chicken wings. The herbaceous falafel is light and tasty with just the right amount of crunch. Side dips include creamy hummus, Babaghanoush and Mast-o Khiar, freshly prepared with yogurt, cucumber and dill. I highly recommend the Koobideh — made with minced ground beef or chicken, seasoned with grated onions and spices, appropriately served with Basmati rice, grilled tomato, onions, and green peppers. The marinated rack of lamb is not to be missed — so incredibly tender and flavorful you won’t believe your taste buds. You will also find an assortment of kabobs to suit any palate, including elegantly marinated salmon, chicken, filet mignon, shrimp or veggie skewers. At Parmiss, rice is anything but dull. The Albaloo Polo compliments any meal, seasoned with cinnamon, saffron and a surprising touch of sour cherries — adding just the right balance of aromatics and sweet tang. We like to call symptoms ‘secondary conditions.’ We look at the spine and nervous system and ask, ‘Is there a connection deeper than my arm hurting or having shooting pain? Where does the dysfunction come from?’ That’s why we incorporate state-of-the-art diagnostics like digital x-rays and surface thermography to get a better picture.” 

Dr. Anderson often treats patients who have become frustrated with their conditions and are seeking alternate methods of care. There are no cookie cutter approaches at Trestles Chiropractic and every patient receives a thorough evaluation and customized therapy for their unique issues. 

“I started seeing Dr. Ryan Anderson about eight years ago. He really helped me get adjusted after having my second baby and helped to relieve my shoulder and back pain. Any time I need an adjustment, I always go to see him— I would recommend him to everyone,” enthuses Julie B.

Foundations Cognitive Schools

The Foundations program methodology is to move past the traditional concept of simply managing the symptoms of learning disabilities and, instead, address the root cause of these challenges. Based on the concept of neuroplasticity (the brain’s ability to change, heal, and grow in response to targeted training), each day, students perform cognitive exercises that have been scientifically proven to strengthen weak cognitive capabilities. In other words, the goal of Foundations is to transform the brain, establishing capabilities that did not exist and, thus, begin to instill a newfound confidence and a love of learning. By strengthening cognitive capacities, students are able to work through tasks which were once incredibly challenging for them. In addition to its scientific approach to cognitive improvement, Foundations includes state-certified reading, writing, and math programs. When combined with the cognitive exercises, these programs have helped many students achieve dramatic academic improvement. 

INDIVIDUALIZED PROGRAM THAT PROVIDES INCLUSION IN SCHOOL ACTIVITIES
Foundations is a full-time program for students in 1st through 12th grade. Each classroom has a student-teacher ratio of 4:1. Students are assessed and work at a pace and level that is appropriate for his or her particular needs. In order to ensure that students are connected socially to others in their peer group, Foundations is located on the campus of a large private school, which allows students to attend recess, lunch, and enrichment/elective classes (P.E., art, music, etc.) with mainstream students in their grade. They also have the opportunity to play on sports teams and to participate in extra-curricular school activities offered at our partner school, such as choir, dance, cheer, clubs, etc. High School students are offered the option to pursue a High School Diploma, or to participate in a Certificate of Completion program.
